A simple recipe for Potato Bondas, a popular Indian snack:



Ingredients:
  • 3-4 potatoes, boiled, peeled, and mashed
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped

  • 1 cup rice flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon coriander seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional)
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh cilantro (optional)
  • Oil for frying
Instructions:
  1. Prepare the potato mixture: In a bowl, combine mashed potatoes, chopped onion, green chilies, salt, baking soda, cumin seeds, coriander seeds, turmeric powder, and red chili powder (if using). Mix well.
  2. Add rice flour: Gradually add rice flour to the potato mixture and mix until a smooth dough forms.
  3. Add lemon juice and cilantro (if using): Mix well.
  4. Shape into balls: Divide the dough into small portions and shape each into a ball.
  5. Flatten slightly: Flatten each ball slightly into a disk shape.
  6. Fry the bondas: Heat oil in a deep frying pan over medium heat. Fry the bondas until golden brown and crispy.
  7. Serve hot: Serve hot with chutney or tea.
Tips:
  • Use a non-stick pan to prevent the bondas from sticking.
  • Don't overcrowd the pan; fry in batches if necessary.
  • Adjust the amount of chilies and chili powder to suit your spice level.
